Ingrédients
1 L de lait
0.200 kg de jaunes d'œufs
0.250 kg de sucre
0.125 kg de farine
0.500 kg de beurre
1 gousse de vanille
Réaliser une crème patissière
A chaud, incorporer la moitie du beurre
Filmer au contact
une fois la crème refroidit, incorporer le restant du beurre pommade en fouettant pour obtenir une crème lisse et légère.

La crème mousseline peut être aromatisée de la même façon qu'une crème pâtissière.
